8 x American Oak (AO) used hogsheads (HH) - 5 year old. All of these barrels were from the same manufacturer, the same toast, season and grain profile.
4 AO HH barrels had their heads removed and random samples taken from the body of each barrel. These barrels (using an independent shaving company) were shaved using "traditional" hand shaving methods and once again random samples taken from each of the barrels. Each barrel was then toasted over an oak fire. Random samples were then taken from each barrel. Samples from each stage of the shaving process were then sent to AWRI for analysis.
4 AO HH barrels had their heads removed and random samples taken from the body of each barrel. These barrels were then Phoenixed and once again random samples taken from each of the barrels. Each barrel was then toasted using the Phoenix IR toasting method. Random samples were then taken from each barrel. Samples from each stage of the shaving process were then sent to AWRI for analysis.

Phoenixing American oak barrels demonstrated large increases of the majority of oak aromatics:
